Melipona beecheii is a stingless bee native to the Yucatán Peninsula. The Maya kept these bees for centuries, and their honey was reserved for ceremonies and remedies rather than everyday sweetening.
Its nectar is more fluid and higher in moisture than common honey, pale amber in color, with a sweet profile and tart notes. A single hive produces only about one liter a year, which is why it comes in dropper bottles and limited quantities.
